This dessert has it all...a crunchy caramel top under which a silky smooth, creamy custard sits waiting for you to make that first crack with your spoon. And I bet you thought it was too difficult for you to attempt at home. Well I'm here to tell you that Crème Brûlée is a doddle to make and this recipe gives it an extra special twist by flavouring the custard with fragrant Earl Grey tea.
Recipe:
425ml double cream
100ml whole milk
3 heaped tsp Earl Grey tea
5 lg egg yolks
50g caster sugar (plus extra for sprinkling)
PLEASE NOTE: ideally you would use a blow torch and you would be VERY CAREFUL! But if you don't have one you can get the same results on top by setting your grill/broiler to max heat and sticking these guys under that for a minute or two
